Brown
Rice with Garlic and Pine Nuts
Ingredients
4 green onions, chopped (white and some green)
1 small red pepper, chopped
1/4 cup pine nuts
4
cloves garlic, minced
1 tablespoon butter or margarine,
melted
2 cups cooked brown rice (cooked
in chicken or vegetable stock)
2 tablespoons fresh parsley
Directions
Sauté
onions, peppers, pine nuts, garlic and butter
in a skillet on medium heat until golden. Add
rice and parsley and stir until heated through.
Makes 4 servings.
