Skordalia
Ingredients
1 pound baking potatoes, boiled
until soft, cooled, and peeled
3 large cloves garlic, finely
minced
1 teaspoon salt and fresh ground
pepper
1/4 to 1/2 cup virgin olive oil
2 tablespoons fresh lemon juice
(or white vinegar)
Directions
Mash potatoes by hand until smooth. Pound garlic and salt to a smooth paste and add to potatoes. Beating steadily, add oil slowly to make a smooth mixture. Stir in lemon juice and pepper to taste. Serve warm or cold as spread.
